'Northern Brewer'

The variety 'Spalter' is an old local variety from the region around the little town Spalt, southern to Nürnberg.
Similar to 'Tettnanger' or 'Hallertauer' the variety 'Spalter' belongs to the so called "Saazer Formenkreis" which collects all varieties based on the variety 'Saazer'.
'Spalter' is a strong growing an healthy variety, but with low yield.
Because of its fine aroma the 'Spalter' still is in production mainly sold to breweries that appreciate this flavor note.

'Teamaker' can score with a special feature: the bitterness (alpha acid) is very low.

Because of the very low content of bitterness it's especially interesting for usage beside bittering. It can be used for late hopping in brewing or for example in teas or cosmetic articels or all other ideas to which bitterness is disturbing.

 

A good dual-purpose hop, Cashmere showcases flavors lemon, lime and melon, exhibits a smooth bitterness and is mildly aromatic with a subtile herbal bouquet.

The variety 'Taurus' developed in Hüll should continue the succes of 'Magnum'. Content of alpha-acid is a bit higher compared to 'Magnum'. The leaves an humbles are smaller and easier to harvest and drying.
The optical habitus of this variety differs a lot compared to massiv 'Magnum': slim, tight and nearly with a pointed head.
'Taurus' is building up a lot of normal sized, strong and heavy humbles.

'Cascade' is an us-american aromatic variety, released in 1972.
The origin is 'Fuggle'.

'Cascade' resists infections of downy meldew, is partly tolerant to Verticillium and prone to aphids.
This variety is characterised by low bitterness but also fine aromatic elements.
The content of alpa-acid should be about 3-6%.

Craft breweries love varieties like 'Cascde' because they could give the beer a personal character. The light flavour of Citrus is the reason for counting 'Cascade' to the socalled "flavour-hops".
